After months of buzz, the brand new Bahn Mi shop on Bedford Avenue finally opened its doors on Monday afternoon to a steady flow of patrons, anxious to try the nabe’s newest Vietnamese sandwich. The shop now functions as a to-go stand, but has a larger interior space, complete with a backyard area, slated to open next month, just after they receive their liquor license.
The new Bahn Mi shop opens on the wings of a recent Vietnamese sandwich trend—as documented extensively by the New York Times not two months ago—but owner Dung Trinh, one of the shop owners who also doubles as the chef made it abundantly clear that his shop has nothing to do with the other guys—it is truly a labor of love.
“We really don’t care how many others there are, we know that we’re the real deal,” Trinh said. “All three owners love sandwiches, and we’ve been all around town trying to find good sandwiches but none are up to our standards, so we opened our own shop. And if I fail, I don’t care because this is my dream. I don’t have a dollar in my pocket, and I can’t sleep at night, but I’m building my dream and I’m so happy.”
Bahn Mi is a family business that originally started in Houston, Texas, Trinh’s hometown. His aunt owns two bakeries, Alpha Bakery and the Parisian, which inspired Trinh’s search for the perfect baguette to accompany his fresh custom sandwich ingredients.
In addition to the excitement of opening your very first restaurant after 17 years in the restaurant industry—and a culinary arts degree—Trinh is elated to be in Williamsburg, a neighborhood he describes as “fresh and artsy, a place where people still enjoy life.”
