When it comes to an elegant Italian dining experience in Greenpoint, look no farther than La Piazzetta. The Graham Avenue restaurant boasts an exquisite array of traditional Italian entrees, wines, and desserts. The large, naturally lit dining room and the dark wood-grain bar provide a relaxed, soothing atmosphere in which to enjoy some of the neighborhood’s best Italian food.
La Piazzetta is a family affair—co-owned and managed by Carlo Fortunato, son of Mario Fortunato, who owns the locally-loved Fortunato Brothers bakery on Manhattan Avenue. At La Piazzetta, Carlo and co-owner/head chef Francesco Cuozzo adhere to the same sensibility that has helped Fortunato Brothers flourish since 1976—serving fine, authentic Italian food at an affordable price.
Francesco says that La Piazzetta is the one of the few places in the neighborhood that makes risotto, due to the dish’s high level of difficulty. He was kind enough to share the recipe with the Gazette.
Risotto Mare Monte
1/2 pound Italian Arborio rice
1 cup chopped radicchio
15-20 chopped shrimp (any size)
1 liter fish stock
salt and pepper
1 teaspoon parsley
1 scoop of tomato sauce (any kind. NO KETCHUP)
1 tablespoon butter
1/4 cup parmesan cheese
1/2 cup Moscato wine
1/4 cup extra virgin olive oil
In a medium sized braising pan, add the olive oil and the shallots. Sautee on low heat until shallots are golden brown. Add the rice. Toast rice for about two (2) minutes, stirring constantly. Add the Moscato wine, and cook down until wine has evaporated. Continue mixing throughout. Mix in the fish stock, and then add the radicchio. Mix slowly for five (5) minutes. Then add the shrimp, parsley, and tomato sauce. Simmer mixture for 15 minutes, stirring throughout. Add more stock as needed. After 15 minutes, turn off the heat and add parsley, parmesan cheese, and butter. Mix with a wooden spoon, and serve.
