Brooklyn Stable’s Changing Vibe, Stable Service

Change is the constant at Brooklyn Stable. The vibe at the former Odyssea space varies depending on that day’s theme. But regardless of whether the bar/ restaurant is featuring art, sports, music, trivia, or dancing, it always provides relaxation and fun.

Last September, the owners of Odyssea brought in partner Delores Hoskins Auguet, a 15 year veteran of the service industry, to help attract more business. “I’ve completely changed the staff, the vibe, the food menu, and the music,” she said.

The 1,800-square-foot Brooklyn Stable has something for everyone. Five flatscreen TVs broadcast sporting events. There is a 50-cent wing night, live acoustic music on Fridays, weekly shows featuring various artists, a DJ on weekends, and a soon-to-be-added trivia night. Auguet, who runs three other venues in the city said, “There are all different dimensions to Williamsburg. I wanted to make it comfortable for someone who lives in the neighborhood.”

Like the events schedule, the menu also accommodates just about anyone. They serve 25 brands of bottled beer and have another 12 on tap. There are seven unique $11 cocktails, named for the boroughs, such as the Staten (gin with cucumbers, lavender syrup, and a splash of soda), the Bronx (a margarita with fresh citrus, muddled jalapenos, and cilantro infused tequila), and the Brooklyn, whose recipe remains a secret. Happy hour is everyday from 4 p.m. to 7 p.m., where well drinks, wines, and select draft beers are only $3.

The food menu contains standard bar fare like chicken fingers ($8), chili cheese fries ($7), and potato skins ($8).For the more health conscious, they also have hummus with pita bread ($4) and an avocado salad ($9).

Auguet said it took a while for people to discover her changes. But gradually customers have embraced the new bar with its focus on their demographic. “Since September it’s been a steady climb,” said Auguet. “Initially it was a little tough because we had to prove ourselves. Odyssea wasn’t catering to the neighborhood crowd. Since we reconfigured the partnership we’ve made it more neighborhood friendly.”

Unlike many of the bars in the Lorimer-Metropolitan area, Brooklyn Stable isn’t divey or too fancy. It consistently airs sports, which is somewhat unusual in the area. Although the emphasis is on creating a neighborhood vibe, the new owner said the most important thing is that customers are comfortable and satisfied with the service. “What we’re trying to go for is not just the sports bar, and not just a DJ spot or an art show place, but a place where everyday you come in and something different is going on,” Auguet said. “It doesn’t matter what day it is. You can always come in and get the same drinks and the same great service regardless of what’s happening.”
